Ground spices are food ingredients that can enrich the taste, aroma and taste of dishes have a very limited service life. Many manufacturers use formalin as preservative to overcome short shelf life ground spices. Formalin is clear, colorless or almost liquid with pungent odor. The prohibited in Regulation, because formaldehyde toxic (poisonous). This study identified content instant market Malang City. purpose this was determine levels contained five traders Market Five samples were analyzed taken using Purposive Sampling technique. Qualitative testing carried out Test Kit quantitative for determination Spectrophotometry UV-VIS . results showed based on observations qualitative tests, two sold positive formaldehyde. Meanwhile, test UV-Vis tested, them 0.378% Rendang spice 0.516% curry spice. So rendang not suitable consumption cannot be added at all.
